Instructions
  1. Brown meat- take out of pan
  2. Fry onions, garlic and ginger until soft
  3. Add spices- leaving OUT the cardamon pods and bay leaf- stir for 1 min
  4. Add water
  5. Use a hand blender to create a paste of your onions and spices- use a fork to mash if you don't have a hand blender
  6. Add cardamon pods and bay leaf
  7. Add tomatoes and spinach- cook for 1-2 mins
  8. Return browned chicken to the pot
  9. Cover and simmer until meat is cooked through
Recipe Notes

To make this even quicker:

  • buy a bag of 2 min microwave rice
  • a pack of nans
  • use frozen ginger and frozen garlic
  • use frozen spinach

All can be purchased at your local supermarket

You can substitute chicken with lamb
